Quick and Easy Pizza Crust and Pizza

These are quick easy and delicious!

  • 1/4 cup almond flour (avaialble here NOW Foods Almond Flour, 2 pk)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar or colby cheese
  • 11/2 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2tsp Italian seasoning
  • dash of mineral salt (available here)
Method

 

  1. Preheat oven to 375
  2. Grease pizza pan (or 9x11baking pan for deep dish type crust)with coconut oil or spray with coconut oil
  3. Whisk the dry ingredients(flours,Parmesan.salt, baking powder) and add to eggs ,
  4. Stir in mozzarella and cheddar or colby cheese
  5. pour into baking pan and spread sprinkle with garlic power and Parmesan cheese
  6. Bake at 375 for about 12-15 minutes until firm to touch and not overly fluffy. (you will understand when you cook it)
  7. Add sauce ( we used plain tomato sauce with seasonings added you could use jar sauce that is sugar free)
  8. Add toppings (s friendly if you are a trim Healthy mama, unless you want a crossover)
  9. Bake another 10-12 (about 15 for the deep dish -glass pan)minutes until fully cooked and cheese is melted.
  10. Let it cool about 5 minutes and dig in!

We doubled the recipe and made 2 deep dish pizzas 1 vegetarian for my daughter.( the one with the sriacha added to the sauce)

combine mozzarella and colby

add mixture to mixing bowl

Grease pan with coconut oil

Spread onto 9×13 pan

Add toppings

finished vegetarian pizza cooked a little longer than regular pizza making crust a little drier and less oeey gooey

veggie pizza

Deep dish pizza

Happy teens and mom’s everywhere are going to  love these easy to make and take Healthy Pizza Rolls!
This is teen movie night , potluck size, or put a few in the freezer size.
Feel  free to cut the recipe in half if you like.
Or freeze for a quick treat.
We never have any leftovers!!! Every potluck they get gobbled up quickly

Ingredients

 

  • 8 eggs slightly beaten or whisked
    • 1/3-1/2 cup grated parmesean  cheese

Milano’s Parmesan Cheese Jars, Imported Grated, 16 Ounce

    • 1/2 cup coconut flour

Organic Coconut Flour (4 lb) by Anthony’s, Certified Gluten-Free, Non-GMO & Kosher

    • 5-6 cups shredded mozzarella cheese
    • 11/2 tsp baking powder

Argo Baking Powder, 60 Ounce

  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2tsp Italian seasoning
  • dash of Pink salt 
  • 1 small can tomato sauce
Method

 

  1. Preheat oven to 350 for
  2. Grease mini muffin tin with coconut oil or spray with coconut oil
  3. Whisk the dry ingredients and add to eggs ,
  4. Stir in remains ingredients. (cheese and tomato sauce)
  5. Drop by rounded spoonful into 48 mini  muffin wells. (2 mini muffin pans)
  6. Bake at 350 for 25-30 minutes until golden and cooked through.

Enjoy low carb pizza rolls!

Low Carb Dairy free Sugar free Crock pot sweetened condensed Milk

2 cans coconut milk

1/3 cup plus 2 tablespoons powdered swerve

3 tablespoons butter (3 tablespoon coconut oil mixed with 1/2 tsp butter extract for vegetarian)

1/3 cup heavy cream( omit if you have dairy restrictions)

1 tsp pure vanilla extract (optional)recipe here

1/4 tsp xanthan gum

Method 1 Whisk all ingredients except vanilla together in heavy bottomed pot on stove making sure to dissolve the swerve and xanthan gum. When steam rises transfer to crock pot.

Stir about every 10-15 minutes to prevent burning at about the 3 hour mark the condensed milk shoul be reduced in half from the original amount.

Stir in vanilla ( optional) and pour into clean glass jar and store in refrigerator.

Method 2

Whisk all ingredients except vanilla together directly in the crock pot turned on to high temperature  making sure to dissolve the swerve and xanthan gum.

Stir about every 10-15 minutes to prevent burning at about the 3 hour mark the condensed milk shoul be reduced in half from the original amount.

Stir in vanilla ( optional) and pour into clean glass jar and store in refrigerator.

*Note I did not add vanilla but did stir in 4 squirts of skinny girls stevia for added sweetener layer.

It is AWESOME! This recipe made 3 pint size canning jars. 1 went in my fridge and 2 went into the freezer.

Taryn( Joy filled Eats) has this awesome pumpkin dump cake recipe  that I have been wanting to try, but since I made Nana’s Little KitchenPumpkin Syrup yesterday I did not have a enough pumpkin. actually made a double batch of pumpkin syrup which left me with only 1/2 can of pumpkin pack. Not quite enough to  make the dump cake… dilemmas

Ah… light bulb.. I just made apple butter (recipe here)

(well actually pear butter) that is THM friendly. It has a lot of yummy fall cinnamon spice like pumpkin pie.

Well i poured the pear butter into the can and topped it off.

Now I have a whole can 1/2 pumpkin pack 1/2 pear butter.

So I thought I will sub 3/4 cup coconut milk for the almond milk and cream. ( I am trying to conserve my almond milk, I go through alot of it and I had extra coconut milk)I really like coconut milk ,so it is worth a shot.

Working along I realize that I did NOT follow directions. (I was blissfully distracted by audio correspondence class.)

I dumped everything in together and not in layers as Taryn clearly instructed. I am getting a little concerned at this point that it might not rise well with the goof, so I added a tsp of baking powder.

The smell in the house is magical! I think I like Taryn even more than I di prior to baking this. ( I liked her a lot prior BTW)

Again I am not following directions( I do not recommend this as a habit)

but I am not letting it cool I am eating it with my coffee NOW and getting back to my class.

( In all fairness we left the house to go to church this morning, yes on a Friday, and I did not eat breakfast or lunch. *I also do not recommend this on THM) So there you have it today I am breaking all the rules and enjoying every bite.

My modification you can taste the pumpkin, but it is not strong like pumpkin pie. Perfect for my house ! My hubby is not big on pumpkin so this works great for me!

Simple Low Carb Pie Crust

1 2/3 cups of Almond flour

(or mix of 1 cup almond flour and 2/3 cup ground nuts into a meal)

Almond Flour Blanched (2lb) by Anthony’s, Certified Gluten-Free

1/2 stick of butter melted

( or 3 tablespoons melted butter and 2 tablespoons coconut oil)

2 tablespoons sweet blend or Pyure Organic Stevia All-Purpose Blend Sweetener, 16 Ounce
Mix well with fork

Press down into coconut greased mini muffin tins

Bake at 350 for 5-7 minutes lightly brown (watch closely not to burn)

Allow to cool slightly before filling.

The Filling

2- 8 ounce packages of room temperature cream cheese
3 large eggs
7 Tablespoons of Sweet Blend  or
(6 tblsp Pyure)Pyure Organic Stevia All-Purpose Blend Sweetener, 16 Ounce
Mix well and pour into pie prepared mini pie shells

Fill the mini pie shells with filling mixture

Bake at 350 for about 20 minutes (ovens vary do not let burn)

Cheesecake will be firm and not jiggly

Let cool

Remove gently from tin with a spoon by working your way around and under the shell and lift out.

I like mine with berry sauce and a squirt of fat free ready whip

Finished product is fantastic even for non THM eaters!!!!

I had a lot of feedback on my previous recipe using skinny chocolate for chocolate chips with regards to chips melting when taking them out of the molds. after readers suggestions and trial and error I think this is a much better version of the sugar free chocolate chips that is still very economical.

Ingredients
Method
  • whisk 1/4 Cup cocoa powder and 5 tbsp powdered swerve together in a bowl
  • Melt 1/2 cup coconut oil in sauce pan with 1/2 bar baking chocolate stirring well to keep from burning
  • Pour melted  chocolate into powdered cocoa swerve mixture and whisk mixture well to dissolve the powder.
  • Set your mold on a lined ( to keep down mess ) baking sheet ( one that will fit in your freezer) this is optional but makes it easier to put the molds into the freezer.
  • Pour over chocolate chip molds and spread out with spatula. freeze in freezer until firm and pop out and store in plastic bag in freezer .

Chicken Bacon Ranch Bake THMS Low Carb

Ingredients

  • 4chicken Breasts
  • 4 pieces of bacon
  • 3/4 cup total of ranch, mayo and greek yogurt combined (1/4 cup each works well)
  • 1/2 cup mozzarella cheese

Method

    • Wrap bacon around chicken Breast
    • Cover in mayo mixture and top with cheese
    • Cover with aluminum foil and bake at 350 about 45 minutes
