Southern Buttermilk Fried chicken

It just makes me smile when I make a traditional Southern Recipe for hubby that he likes! This is it! Picky Southern hubby Taste bud approved! YAY!!!!!

You all know that I am not calling hubby picky … it is his tastebuds that are ! šŸ™‚ They like the familiar texture and flavors that say comfort food and home cooking. I think we are all like that to some degree. ( or our tastebuds are anyway)

I hope that your picky tastebuds enjoy it too!

Ingredients

I jar buttermilk

5 lbs large leg quarters whole or each cut in half

1 cup Coconut Flour ( replenish if needed)

1/4 tsp salt

1/4 tsp pepper

1/4 tsp garlic powder

1/4 tsp cayenne( optional)

Spectrum Naturals Organic Shortening –for frying

METHOD

Marinate washed and cut chicken breast 24 hours in Buttermilk .

Pre heat oven to 350

Mix dry ingredients and add to shallow baking dish and toss chicken to coat .

Heat 1 1/2 inches of oil in Cast iron or Heavy bottomed frying pan. Add chciken to the oil 3 or 4 peices at a time. Working in batches , DO NOT OVERCROWD pan.Cover pan and fry 5-7 minutes turn the chicken over and cook an additonal 4-5 minutes.

Move chicken to plate or tray covered with paper towel. When all chicken batches are done browning place the chicken in the oven and bake 25-30 minutes until chicken is cooked through temperature should be 165 degrees.

Chicken Bacon Ranch Bake THMS Low Carb

Ingredients

  • 4chicken Breasts
  • 4 pieces of bacon
  • 3/4 cup total of ranch, mayo and greek yogurt combined (1/4 cup each works well)
  • 1/2 cup mozzarella cheese

Method

    • Wrap bacon around chicken Breast
    • Cover in mayo mixture and top with cheese
    • Cover with aluminum foil and bake at 350 about 45 minutes
