Chocolate covered marshmallows

EASTER CANDY! Easter is coming and i dont know about you  , but I have a few favorite candy choices that I look forward to every year!!!

Chocolate covered marshmallows is right at the top of that list!!!!

So I took my marshmallow recipe and cmae up with a new EASTER FAVORITE! I hope that you will call it one of your Easter favorites too, this Easter and many more to come!

So here we go chocolate covered marshmallows! Just in time for Easter!
Some helpful tools and supplies for this recipeWilton 1904-1017 Candy Melt Dipping Tool, Set of 3
We are going to start with my marshmallow recipe here

After freezing remove marshmallows from the freezer after you make this milk skinny chocolate using

    • 1/4 Cup cocoa powder
Method
  • whisk 1/4 Cocoa powder and 5 tbsp powdered swerve together in a bowl
  • Melt 2/3  cup coconut oil in sauce pan
  • Pour melted coconut oil into cocoa powder swerve mixture and whisk mixture well to dissolve the powder.
  • add 1 tsp vanilla and 1/8 cup cold heavy whipping cream
  • Mix well the chocolate will thicken and start getting cold.. think magic shell coating.
  • as it thickens up add frozen  marshmallows to bowl to cover completely I use this tool here to dip the marshmallow in the chocolate, let the chocolate drip from the marshmallow and dip another time if needed , again let excess chocolate drip from the marshmallow. Place the marshmallow on parchment lined freezer safe container and place in the freezer to allow the chocolate to finish hardening.
  • Move the finished marshmallows to the fridge to enjoy immediately or leave in the freezer and take out one at a time to thaw individually.

Southern Buttermilk Fried chicken

It just makes me smile when I make a traditional Southern Recipe for hubby that he likes! This is it! Picky Southern hubby Taste bud approved! YAY!!!!!

You all know that I am not calling hubby picky … it is his tastebuds that are ! 🙂 They like the familiar texture and flavors that say comfort food and home cooking. I think we are all like that to some degree. ( or our tastebuds are anyway)

I hope that your picky tastebuds enjoy it too!

Ingredients

I jar buttermilk

5 lbs large leg quarters whole or each cut in half

1 cup Coconut Flour ( replenish if needed)

1/4 tsp salt

1/4 tsp pepper

1/4 tsp garlic powder

1/4 tsp cayenne( optional)

Spectrum Naturals Organic Shortening –for frying

METHOD

Marinate washed and cut chicken breast 24 hours in Buttermilk .

Pre heat oven to 350

Mix dry ingredients and add to shallow baking dish and toss chicken to coat .

Heat 1 1/2 inches of oil in Cast iron or Heavy bottomed frying pan. Add chciken to the oil 3 or 4 peices at a time. Working in batches , DO NOT OVERCROWD pan.Cover pan and fry 5-7 minutes turn the chicken over and cook an additonal 4-5 minutes.

Move chicken to plate or tray covered with paper towel. When all chicken batches are done browning place the chicken in the oven and bake 25-30 minutes until chicken is cooked through temperature should be 165 degrees.

Simple THM friendly Low Carb Buttermilk

Ingredients

  • 1 pint heavy or whipping Cream
  • 3 Tablespoons apple cider vinegar

Method

  1. Pour Cream into a canning jar and a vinegar.
  2. Shake well and allow to sit 15-20 minutes.
  3. The cream will start to curdle.

It is that simple. You can now use this for your buttermilk biscuits, pancakes or fried chicken (Fried chicken is the way that I use it the most.)

Sugar Free Pear Relish

I know what your thinking pear what?

You heard it right… Pear Relish! And it is delicious !

Great addition to your hot dog or hamburger or condiment stand alone, yes it is that good!

There are dozens of recipes but this is my favorite traditional converted to Trim Healthy Mama.

Ingredients

20 medium pears About half that for large pears)

3 large onions,  chopped

3 large green bell peppers, seeded and coarsely chopped

2 jalapeno peppers, coarsely chopped

2 cups apple cider vinegar

1 cup Pyure

8 ounces prepared mustard

1 tablespoon salt

5 (1 pint) canning jars with lids and rings

Directions

Place pears, onions, green bell peppers, and jalapeno peppers vinegar, sugar, prepared mustard, and salt into to a large pot.

Stir  the pear mixture and bring to a boil; reduce heat to medium-low and simmer until flavors have blended and relish is thickened, about 1 hour.

Pack pear relish into the hot, sterilized jars,

You need to be sure to sterilize your jars and lids

filling the jars to within 1/4 inch of the top  process for about 20 minutes or the amount of time recommended for your area.

Remove the jars from the stockpot and cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight.

There you have it yummy Pear Relish!!!
