2 cans coconut milk

1/3 cup plus 2 tablespoons powdered swerve

3 tablespoons butter (3 tablespoon coconut oil mixed with 1/2 tsp butter extract for vegetarian)

1/3 cup heavy cream( omit if you have dairy restrictions)

1 tsp pure vanilla extract (optional)recipe here

1/4 tsp xanthan gum

Method 1 Whisk all ingredients except vanilla together in heavy bottomed pot on stove making sure to dissolve the swerve and xanthan gum. When steam rises transfer to crock pot.

Stir about every 10-15 minutes to prevent burning at about the 3 hour mark the condensed milk shoul be reduced in half from the original amount.

Stir in vanilla ( optional) and pour into clean glass jar and store in refrigerator.

Method 2

Whisk all ingredients except vanilla together directly in the crock pot turned on to high temperature  making sure to dissolve the swerve and xanthan gum.

Stir about every 10-15 minutes to prevent burning at about the 3 hour mark the condensed milk shoul be reduced in half from the original amount.

Stir in vanilla ( optional) and pour into clean glass jar and store in refrigerator.

*Note I did not add vanilla but did stir in 4 squirts of skinny girls stevia for added sweetener layer.

It is AWESOME! This recipe made 3 pint size canning jars. 1 went in my fridge and 2 went into the freezer.

Crust
    • 3eggs
    • 1/2 tsp coconut oil

Viva Labs The Finest Organic Extra Virgin Coconut Oil, 16 Ounce

    •  1/4 cup parmesan cheese
    •  3 cups mozerella cheese
    •  pinch of mineral salt
    •  1/4 cup coconut flour

Viva Labs Organic Non-GMO and Gluten-Free Coconut Flour, 4 Pound

    •  1/4 cup Almond flour

Almond Flour Blanched (2lb) by Anthony’s, Certified Gluten-Free

  •  1 tsp xanthan gum

filling

  • Salsa
  • Cheddar or jack cheese (about a tsp per bite)
  • (optional taco meat, or canned, drained chicken or frozen strips)

Microwave Mozzarella cheese  and coconut  oil in 30 second to 1 minute increments to soften it
When soft and partially melted stir in Parmesan cheese , almond flour, coconut flour xanthan gum, and baking powder whisk in eggs or mix in mixer.

Grease muffin pan and fill with about a tablespoon of  Crust mixture, making a well in the muffin cup and working it up the sides to form a little cup to put the salsa into.
After forming the cups add filling ingredients and bake at 350 degrees for about 20 minutes.
Let cool about 3-5 minutes and gently work a spoon around the edges and underneath the taco bite gently lifting it out when you have worked it loose. Eat and enjoy with your favorite taco toppings or freeze for later

Home made Pure Vanilla Extract

Making your own Pure Vanilla extract.
Okay for starters let’s address the issue of alcohol.
Real vanilla contains Alcohol, yes even the very expensive organic variety. There really is not a way around it, but it really will be okay.

I am not asking you to drink the bourbon or the entire Bottle of Vanilla. ~grin
If you do drink Alcohol your bottle of Bourbon might need to be replenished more frequently,  thenthose of us who do not.
I bake and use vanilla almost daily and my bottle of vanilla is still about 3/4 full after 6 months.(8 ozs)
Great investment for great vanilla and great food!

Okay so what we need to get rolling here…

  • Bottle or bottles ( You can make more than one at a time, if you order the vanilla beans below you can make 2 batches at once and still have bourbon left to make more as gifts or use in a cake recipe, if you like)
  • Vanilla Beans
  • Bourbon

 Split 5  vanilla Beans in half lengthwise. 
Place the vanilla beans in a bottle. Cover them with 8 ounces bourbon, making sure they are completely submerged. Cover  bottle and give it a good shake.Store the bottle of vanilla beans in a cool, dark place for 6 weeks  shaking it from time to time. Taste the extract and let it infuse longer if you want a stronger flavor. I leave the pods in my bottle but you can remove them from the bottle when infusion is complete.

Enjoy your vanilla!

Taryn( Joy filled Eats) has this awesome pumpkin dump cake recipe  that I have been wanting to try, but since I made Nana’s Little KitchenPumpkin Syrup yesterday I did not have a enough pumpkin. actually made a double batch of pumpkin syrup which left me with only 1/2 can of pumpkin pack. Not quite enough to  make the dump cake… dilemmas

Ah… light bulb.. I just made apple butter (recipe here)

(well actually pear butter) that is THM friendly. It has a lot of yummy fall cinnamon spice like pumpkin pie.

Well i poured the pear butter into the can and topped it off.

Now I have a whole can 1/2 pumpkin pack 1/2 pear butter.

So I thought I will sub 3/4 cup coconut milk for the almond milk and cream. ( I am trying to conserve my almond milk, I go through alot of it and I had extra coconut milk)I really like coconut milk ,so it is worth a shot.

Working along I realize that I did NOT follow directions. (I was blissfully distracted by audio correspondence class.)

I dumped everything in together and not in layers as Taryn clearly instructed. I am getting a little concerned at this point that it might not rise well with the goof, so I added a tsp of baking powder.

The smell in the house is magical! I think I like Taryn even more than I di prior to baking this. ( I liked her a lot prior BTW)

Again I am not following directions( I do not recommend this as a habit)

but I am not letting it cool I am eating it with my coffee NOW and getting back to my class.

( In all fairness we left the house to go to church this morning, yes on a Friday, and I did not eat breakfast or lunch. *I also do not recommend this on THM) So there you have it today I am breaking all the rules and enjoying every bite.

My modification you can taste the pumpkin, but it is not strong like pumpkin pie. Perfect for my house ! My hubby is not big on pumpkin so this works great for me!

THM Pear Butter

PEAR BUTTER

This is what happens when my FIL tells me he has pears that need to be picked. I make pear butter!

What is pear butter you ask?

Apple butter without the Apples! LOL

Taste just like homemade Apple butter

You can make this recipe and can it to put into the pantry or put in jars and freeze.

I doubled the recipe and put in canning jars in a water bath

DIRECTIONS

  1. Place pears in slow cooker layering sugar between each layer.
  2. Add rest of ingredients on top and pack them down as well as you can.
  3. Cover and cook on high for 1 hour.
  4. Reduce heat to low. Open and give it a stir. Keep covered and cook 8 hours or until thick and dark brown, stirring occasionally. (You can do this overnight and can in the morning).
  5. Uncover and cook for the last hour on low.
  6. If a smoother apple butter is desired, you may puree in blender or food mill.
  7. Place in sterile jars with lids and process for 10 minutes in hot water bath or you can freeze.

Simple Low Carb Pie Crust

1 2/3 cups of Almond flour

(or mix of 1 cup almond flour and 2/3 cup ground nuts into a meal)

Almond Flour Blanched (2lb) by Anthony’s, Certified Gluten-Free

1/2 stick of butter melted

( or 3 tablespoons melted butter and 2 tablespoons coconut oil)

2 tablespoons sweet blend or Pyure Organic Stevia All-Purpose Blend Sweetener, 16 Ounce
Mix well with fork

Press down into coconut greased mini muffin tins

Bake at 350 for 5-7 minutes lightly brown (watch closely not to burn)

Allow to cool slightly before filling.

The Filling

2- 8 ounce packages of room temperature cream cheese
3 large eggs
7 Tablespoons of Sweet Blend  or
(6 tblsp Pyure)Pyure Organic Stevia All-Purpose Blend Sweetener, 16 Ounce
Mix well and pour into pie prepared mini pie shells

Fill the mini pie shells with filling mixture

Bake at 350 for about 20 minutes (ovens vary do not let burn)

Cheesecake will be firm and not jiggly

Let cool

Remove gently from tin with a spoon by working your way around and under the shell and lift out.

I like mine with berry sauce and a squirt of fat free ready whip

Finished product is fantastic even for non THM eaters!!!!

I had a lot of feedback on my previous recipe using skinny chocolate for chocolate chips with regards to chips melting when taking them out of the molds. after readers suggestions and trial and error I think this is a much better version of the sugar free chocolate chips that is still very economical.

Ingredients
Method
  • whisk 1/4 Cup cocoa powder and 5 tbsp powdered swerve together in a bowl
  • Melt 1/2 cup coconut oil in sauce pan with 1/2 bar baking chocolate stirring well to keep from burning
  • Pour melted  chocolate into powdered cocoa swerve mixture and whisk mixture well to dissolve the powder.
  • Set your mold on a lined ( to keep down mess ) baking sheet ( one that will fit in your freezer) this is optional but makes it easier to put the molds into the freezer.
  • Pour over chocolate chip molds and spread out with spatula. freeze in freezer until firm and pop out and store in plastic bag in freezer .

Chicken Bacon Ranch Bake THMS Low Carb

Ingredients

  • 4chicken Breasts
  • 4 pieces of bacon
  • 3/4 cup total of ranch, mayo and greek yogurt combined (1/4 cup each works well)
  • 1/2 cup mozzarella cheese

Method

    • Wrap bacon around chicken Breast
    • Cover in mayo mixture and top with cheese
    • Cover with aluminum foil and bake at 350 about 45 minutes
