Strawberry Cheesecake in a Jar

Crust

Use one low carb crust of choice

or this one

Simple Low Carb Pie Crust

Almond Flour Blanched

There are some in the cookbook, My table of three has a good one on her pumpkin cheese cake post, or I have on here.

Filling

• (4) 8 oz packages of cream cheese
• 1 cup Pyure or Pyure Pyure Organic Stevia / Truvia Blend Truvia All Natural Sweetener My family really prefers the truvia sweetener over all others

• 2 tsp vanilla
• juice of 1 lemon
• 6 eggs

Pipe whipping Cream

1/2 cup heavy whipping Cream whipped on high with 1/2 tsp vanilla and 5 tbsp powered swerve Swerve

( adjust to your own taste) or you can use truvia ground in a coffee grinder to powder form.

Method

Preheat oven to 350

Spray 12 jelly jars(8 ozs) with coconut oil.

Make your crust Divide evenly into jars tapping down with a spoon to cover the bottom of the jars.

In a large mixing bowl beat cream cheese ,ad in eggs one at a time then add truvia, lemon and vanilla extract.

Divide the mixture evenly into the jars.

Place jars in a large roasting pan. Fill with hot water up to the where the cheesecake filling is.

Bake for 30 minutes. The cheesecake should be cooked and slightly firm(not jiggly) when finished.

Remove the jars with canning tongs like the ones in this kit.

Cool on Wire Rack

Add the berry sauce then place in fridge to set.

Add whip cream to mixer on high allowing soft peaks to form and slowly add sweetener and vanilla add to piping bag and pipe onto cheese cakes .

Top with 1/2 strawberry

Eat and enjoy one. Cap with jar lids and refrigerate or freeze the remaining jars.
