Sugar Free Marshmallows
Ingredients
1/2 cup cold water
1/2 cup egg whites ( I have also successfully used egg white powder with the added amount of water recommended on the jar to equal 1/2 cup egg whites)
1/2 cup pyure
4 Tblsp Great Lakes Gelatin
1/8 tsp cream of tartar
1 1/2 tsp vanilla extract
Powdered swerve for dusting
Method
Sprinkle 4tbsp gelatin over 1/2 cup water in a bowl. Let sit for 5 minutes.
In a small saucepan , heat up 1 cup water over medium high heat until just about to boil.
Add the bowling water in the saucepan to the gelatin mixture in the bowl.
Stir until well dissolved and cool .
Add Pyure and vanilla to gelatin as it cools.
Using whisk attachment and add egg whites and cream of tartar to mixer on low speed and gradually increase to high for until soft peaks form.
Slowly pour in the gelatin mixture a little at a time until all of the gelatin is mixed in.
Continue beating with the whisk attachment until light and fluffy. Spread out into a parchment lined 9x 11 pan and sprinkle with powdered swerve. 
Move to the refrigerator or freezer right away until cool an solid
Cut into desired marshmallow size squares. I cut mine pretty hefty.
