THM FP Mac and cheese

FP Mac n CheeseMy picture depicts the spaghetti noodles, because that is all that I had left in the pantry. I would normally use the Penne or other shaped pasta noodles that more resemble macaroni.

I was trying to come up with a quick and easy lunch using my not naughty (or zero noodles)  for the upcoming 8 week  20 lb challenge.

Here is what I came up with

Ingredients

1 pkg zero noodles
Miracle Noodle Shirataki Gluten Free Pasta, 6 bag Variety Pack, 44 ounces (Includes: 2 Shirataki Angel Hair, 2 Shirataki Rice and 2 Shirataki Fettuccini)

2 light laughing cow cheese wedges (or aldis brand happy farms)

2 tsp Parmesan cheese

1/8 cup unsweetened almond milk

1 tsp collagen powder
Great Lakes Gelatin Collagen Hydrolysate Beef, Kosher, 16 oz.
dash of mineral salt
Sherpa Pink Himalayan Salt, 2lbs Extra-Fine Grain
Optional spices ( I like a dash of cayenne and chipotle pepper on mine)

Method

Mix all ingredients in saucepan on medium heat stirring until the cheese melts , looking like butter.

Pour into your bowl and enjoy!

( I have added baby spinach to this and it is a delicious addition!)
