Cheese Cake Bites

Simple Low Carb Pie Crust

1 2/3 cups of Almond flour

(or mix of 1 cup almond flour and 2/3 cup ground nuts into a meal)

Almond Flour Blanched (2lb) by Anthony’s, Certified Gluten-Free

1/2 stick of butter melted

( or 3 tablespoons melted butter and 2 tablespoons coconut oil)

2 tablespoons sweet blend or Pyure Organic Stevia All-Purpose Blend Sweetener, 16 Ounce
Mix well with fork

Press down into coconut greased mini muffin tins

Bake at 350 for 5-7 minutes lightly brown (watch closely not to burn)
Allow to cool slightly before filling.

The Filling

2- 8 ounce packages of room temperature cream cheese
3 large eggs
7 Tablespoons of Sweet Blend  or
(6 tblsp Pyure)Pyure Organic Stevia All-Purpose Blend Sweetener, 16 Ounce
Mix well and pour into pie prepared mini pie shells

Fill the mini pie shells with filling mixture

Bake at 350 for about 20 minutes (ovens vary do not let burn)

Cheesecake will be firm and not jiggly

Let cool

Remove gently from tin with a spoon by working your way around and under the shell and lift out.

I like mine with berry sauce and a squirt of fat free ready whip

Finished product is fantastic even for non THM eaters!!!!
